Hiking at Umstead State Park

Whew, Friday certainly snuck up on me yesterday — and I did not have a Friday Feast to share with you!

Richard took the day off, though, so we enjoyed our own little “Friday Frolick” with a tuna salad sandwich picnic and hiking at William B. Umstead State Park.

  1. Lovely pics from the woods – especially the ferns unfurling, so pretty. It was a hot day but I bet walking was pleasant near the water – before the mosquitoes arrive!
    Glad you enjoyed a day off with a Spring picnic. I love tuna sandwiches – I just know you probably make a great version!

      LOVED seeing those beautiful ferns! And yes, it was a hot day, but not too many bugs yet. We love tuna sandwiches, too! My favorite “go-to” version is tuna, mayo, red onions, dried sweetened cranberries (Craisins work just fine), and a little black pepper. I love the sweetness from the cranberries — really brightens up the flavors. Top off the sandwich with a slice of swiss cheese — yum! Hope you two had a lovely Easter day! xx
